You can build pyramid shapes using SmartArt, but there are some limitations to SmartArt I don’t like: can’t use other shapes (eg. circle, hexagon), text pop-up keeps appearing while you’re editing the smallest detail.
I generally like the look of custom-made shapes better. Here’s a couple of workarounds for creating rows of text inside a shape. Also check out Indezine for another workaround.

How is this different from the smart art feature? (insert/smart art/pyramid)
Hi Vickie – SmartArt has some limitations I don’t like. The font size doesn’t resize automatically. You can’t use other shapes (eg. circle, hexagon). The image has a “SmartArt” look to it instead of a custom-made look. The text pop-up keeps appearing when you’re editing the smallest detail in the shape. It’s personal preference. Some people like SmartArt, and it has several advantages – able to edit text, able to resize rows. But I personally never use SmartArt and feel I can make better-looking diagrams using custom shapes.
